WNC professor co-authors book on synthetic food dyes

Western Nevada College's Psychology Professor Dr. Rebecca Bevans, in collaboration with cancer researcher Dr. Lorne Hofseth, has released a book titled "Everything You Need to Know About Synthetic Food Dyes." The book provides a comprehensive guide on synthetic food dyes, an often overlooked public health topic in the U.S. food system.

The publication synthesizes over 170 scientific studies and aims to serve as a resource for parents, teachers, policymakers, doctors, and scientists. Dr. Bevans' personal experience with her son Alex's neurobehavioral symptoms due to food dyes inspired her to share her knowledge and advocate for change.

Dr. Bevans expressed the importance of the collaboration with Dr. Hofseth: “I have always wanted to write a book, but it seemed extremely overwhelming to me,” she said. “Honestly, I’m much better as a team player."

The book is designed to be accessible and evidence-driven, empowering readers to make informed decisions about their health. "This isn’t a dense academic textbook — it’s a user-friendly resource that empowers readers," said Dr. Bevans.

Despite growing awareness and some corporate commitments to reduce synthetic dyes, federal policies remain largely unchanged except for the ban on Red 3 by the Federal Drug Administration.

"Everything You Need to Know About Synthetic Food Dyes" is available on Amazon and will be available in stores later this year.
